Mom's (Lydia's) Pie Crust Recipe

Ingredients: 2 cups flour 1 tsp baking powder 1 tsp salt 1 scant cup Crisco about 1/3 cup cold water (just enough to form ball)
Extra flour for rolling

Directions: |
Directions:Mix together flour, baking powder and salt. Using Pastry Blender cut in Crisco. Pour in water. Stir a few times with rubber spatula, then use hands to form ball by finishing mixing and then patting into shape. Handle as little as possible. Sprinkle rolling surface with flour. Sprinkle rolling pin with flour. Separate ball into two pieces. Take slightly more than half of one piece and roll thin to size of pan. Flip into pan - cut off remainder. Fill with your favorite filling. Re-roll leftovers and second half of first piece in to a top. Cut breathing holes in the top. One large swoosh down middle and two or three on each side of it. Flip on top of filling. Sprinkle with cinnamon and sugar and dot with about a TBL of butter cut into tiny pieces. Bake at about 400º until top is slightly golden and crisped. |

Notes: I get two tops and two bottoms out of this recipe. Lately I have been using wax paper to roll between - putting a little flour on each "inside" piece before rolling. Then just pick up the paper, peel off a side and lay in pan. Works great. Fern used to roll in a floured bag is what gave me the idea. For apple pie cut up apples into eighths (measure how many you need before you make the crust by heaping the cut apples in the pan) , mix in 2 TBL. of flour, about a cup of sugar and some cinnamon.Put in pie crust.
