1 sweet onion, chopped fine
1 LG apple, peeled and grated
2 cups celery, diced
2 cups shredded carrots
1 LG box or bag of stuffing mix: Pepperidge farm or Mrs. Cubbison's
1 tsp granulated garlic powder and 1 tsp granulated onion powder
1 tsp sesame seeds
1 sleeve Ritz crackers, crushed in food processor
1/2 cup seasoned bread crumbs
Stale seed rolls soaked in some stock and squeeze out
Container of chicken stock for liquid--usually Kitchen Basics low salt
Pinch of Dill weed
Poultry seasonings
Sometimes crush in club crackers
Poppy seed
salt and pepper to taste
Butter and a little oil for sauteing
Add 2 beaten eggs, optional

Directions:
Saute: onions, celery, carrots, apple in a large pan then add stuffing mix. Add crushed Ritz crackers/club crackers then seasonings, pour some stock enough so it is moist then add eggs. Add grated stale roll and bread crumbs then sesame seeds & poppy seeds. Butter a casserole dish and use lid or foil to cover. Bake at 350 for 1/2 hour then uncover until slightly browned. Do not over bake.Quantity of items vary depending on how much stuffing you are making. If made a day ahead: cover overnight with foil. Let sit an hour at room temperature BEFORE you bake for 30 minutes.
