1 fully cooked (6 lb/3 kg) ham
1 can (14 oz) jellied cranberry sauce
1 can (14 oz) apricot halves
2 tbsp. red wine vinegar
2 tbsp. brown sugar
1 lemon, zest and juice
2 tsp Dijon mustard
1/8 tsp white pepper

Peel skin from ham and score fat. Bake ham in shallow baking pan at 325ºF for one hour. While ham is baking prepare cranberry glaze. Drain apricot halves and reserve syrup. Whisk cranberry sauce in medium saucepan over low heat for 5 min. Measure 1/4 c apricot syrup and add to cranberry sauce. Mix in vinegar, brown sugar, lemon zest and juice, mustard and pepper. Continue cooking over low heat 5 min. Bake ham 1 hour longer, basting frequently with glaze. If desired reserve 1 c glaze to serve warm over ham at the table. At serving time, arrange ham on platter and garnish with apricot halves and watercress or parsley.
