4 cups carrots, coarsely grated
1/2 cup stuffed green or black olives, sliced
1/2 cup oil
1/3 cup wine vinegar
2 tbsp. chopped green pepper
1/2 tsp. salt
1/2 tsp. chili powder
2 oz. jar pimento, drained, chopped (optional)
dash onion salt

Directions:
Directions:
In a medium bowl, grate the carrots on the coarse side of a grater. In a separate bowl, mix the remaining ingredients. Pour over the carrots; mix well. Chill for at least 4 hours or overnight.

Mom created this recipe for a contest in the Chicago Tribune. It won and they printed it in the newspaper's food guide. She was very proud and excited...especially when the phone rang off the hook from friends and relatives who congratulated her on winning.
