8 ounces elbow macaroni
1 tablespoon butter
6 ounces fresh baby spinach
1 large egg
1 cup half & half
4 cups sharp cheddar cheese, shredded
1/4 teaspoon dry mustard
1/4 teaspoon smoked paprika
1/4 teaspoon pepper
salt to taste

Preheat oven to 350º.
Bring a pot of water to boil and cook the macaroni according to package directions. In a medium size skillet, melt the butter over medium high heat, add the spinach to the pan and cook until wilted, stirring. Once the macaroni is cooked, drain well and return to the cooking pot, add the wilted spinach to the pot, using a fork mix so there are no clumps of spinach. Whisk together the egg and half & half and add to the pot, combine well. Add 3 cups of the cheese and the seasonings, once mixed all together, pour into a lightly buttered 2 quart baking dish. Cover with foil and bake for about 25 minutes. Remove foil and top with remaining cheese, return to oven for 15 more minutes, or until cheese is melted and bubbly.
