1/3 cup butter
1/3 cup brown sugar, firmly packed
1 cup flour
1/4 cup finely chopped nuts

Filling:
4 oz. cream cheese, softened
2 tbsp. sugar
1 egg
1 tbsp. milk
1 tbsp. lemon juice
1/4 tsp. vanilla extract

Directions:
Directions:
In a medium bowl, cut the butter and sugar with a pastry blender until it resembles cornmeal. Add the flour and nuts; don't overmix. Reserve 1 cup of mixture for topping. Press the remaining mixture into the bottom of a greased 8-inch square pan. Bake in a preheated 350º oven for 12 to 15 minutes. Filling: Cream together the cream cheese and sugar until smooth. Add the egg, milk, lemon juice and vanilla; beat well. Spread over the baked crust and sprinkle with the reserved crumbs. Bake in a preheated 350º oven for 15 to 20 minutes. Cool for 10 minutes and cut into 2-inch squares.

These bar cookies are perfect for dessert. You have to keep them in the refrigerator, but that never seems to be a problem...they disappear as fast as you can put them out!
