1 cup mashed potatoes
2/3 cup shortening
1/3 cup + 1 teaspoon sugar, divided
1 teaspoon salt
1 cup scalded milk
1 package Fleischman's yeast
1/2 cup lukewarm water
1 beaten egg
6 cups flour
1/2 cup butter, room temperature

Directions:
Directions:
1. Cream potatoes, shortening, 1/2 cup sugar and salt. Add scalded milk and cool.
2. Dissolve yeast and 1 teaspoon sugar in very warm water and set aside to "proof", about 10 minutes once yeast bubbles and foams.
3. Add yeast and beaten egg to first mixture.
4. Stir in flour & knead. Let rise until about double in bulk.
5. Knead, roll out, and cut out rolls with round cutter.
6. While holding round cut out in left hand, cut thin pat of butter and place on right half of roll, hold butter in place with knife and use left hand to fold left side over and pinch roll closed. Place in buttered 9x13" baking dish. Repeat for all roll cut-outs. Let rise.
7. Bake at 350ºF for 14-18 minutes until puffed and lightly browned.
