60 pounds venison
40 pounds pork shoulder (do not trim pork)
2 oz ginger
1 1/2 pounds salt
6 oz pepper
4 oz all spice
3 oz Coriander
2 oz mustard seed
1 oz garlic powder
6 oz brown sugar
4 oz curing salt
2 oz cayenne pepper

Grind course mix
Grind fine mix

Let it stand for two days. add water
Smoke 130 degrees for four hours
