2 C sifted flour
2 C sugar
2 t baking soda
1 t salt
2 t cinnamon
4 eggs
1 1/2 C oil
3 C grated carrots
1 C coconut
1 C chopped nuts

Directions:
Directions:
Preheat oven to 350º F

Mix first 4 ingredients together. In another bowl, mix together the eggs, oil and carrots. Combine the 2 mixtures and add the coconut and nuts. This recipe makes enough for 3 layers or a 9x13 pan. Bake layers for 30-35 minutes. Bake 9x13 for 50-55 minutes.
