1/4 C (packed) Light brown sugar
1/4 C Coarsely ground pepper
1/4 C Sweet paprika
2 Tbsp Chili powder
2 Tbsp Kosher salt
1 1/2 Tbsp Onion powder
1 tsp Cayenne pepper, or to taste
2 Racks of St. Louis Cut pork spare ribs
BBQ sauce (Sweet Baby Rays)

Whisk together all of the ingredients in a mixing bowl, using your fingers to break up the clumps of brown sugar,

Store in an air tight container, away from heat and light.

Preheat oven to 300º.

Remove silver skin on underside of the ribs. If you can't remove it, slice through the skin with a sharp knife, in a criss-cross pattern.

Sprinkle both sides with the Fire and Spice dry rub, massaging it into the meat.

Place fat side up and wrap well with heavy duty aluminum foil onto a baking sheet.

Cook for approximately 3 hours, turning the trays halfway through. Uncover the ribs and slather the top with the BBQ sauce. Cook an additional 20 minutes, or so, until the BBQ sauce is bubbling and caramelized.

Bill and I took many wonderful cooking classes at the Viking Cooking School and this was from our "Basic Barbecue" Class. We put the Fire and Spice rub on our BBQ spare ribs and even salmon. You don't need an actual barbecue grill to have delicious, fall off the bone, BBQ spare ribs!
