1 C Sugar
1 C Butter, softened
1 Egg
1 tsp Almond extract
1 tsp Vanilla extract
2 2/3 C Flour
1 tsp Salt
3/4 C Whole almonds, blanched
2 Squares of melting chocolate
Directions:
Directions:
Combine sugar, egg, butter, almond extract and vanilla extract in a bowl. Mix in flour and salt. Cover and refrigerate the dough for approximately 30 minutes or until firm.
*To blanch the almonds, place in boiling water for 1 minute. Remove and place in colander. Rinse with cold water. Let drain.

When you are ready to make the cookies, preheat the oven to 325º. Spray cookie sheet with non-stick spray. Using small portions of dough at a time, roll and work the dough into the shape of a finger. Score the top of the cookie with a knife or spatula to simulate the wrinkles in your knuckles. Press and imprint into the tip of the cookie with your finger, to allow for the almond fingernail. Press almond into the indentation.

Place on cookie sheet and bake for 20-25 minutes until very light golden brown. Place on cooling rack.

*Decorating: Use melting chocolate in a piping bag or Ziploc Bag to line the outside of the fingernail or bottom of the finger, giving it a ghoulish appearance.
