1 C All purpose flour
1/4 tsp Salt
1 tsp Sugar
1 Tbsp Butter, melted and cooled
1 C Milk
2 Eggs

Directions:
Preheat oven to 400º. Grease containers. *You can use a popover pan or use a regular cupcake pan.

In a bowl, stir together flour, salt and sugar until thoroughly blended. Add butter, milk and eggs. With an electric mixer, beat until very smooth (about 2 1/2 minutes), scraping bowl frequently with a rubber spatula.

Pour into greased containers, filling each half way.

For richly browned shell with a fairly moist interior, bake on center rack for 40 minutes; until well browned and a firm touch.

These popovers are simple to make but like a good souffle, I try not to stomp around in the kitchen, they may collapse.
