3-4 Large ripe bananas
1 C Sugar
1 Egg
4 Tbsp Butter/Margarine, melted and cooled
1 1/2 C All Purpose Flour
1 tsp Salt
1 tsp Baking Soda

Directions:
Directions:
Preheat oven to 325ºF. Lightly grease a 9x5" loaf pan, set aside.

In a bowl, mash bananas, approximately 1 cup. Beat in sugar, then egg, then butter.
In another bowl, stir together flour, salt and baking soda. Add to banana mixture and stir until all flour is moistened. Pour batter into prepared pan.

Bake for 55-60 minutes. Makes 1 loaf.

*Muffins: Preheat oven to 350º. Lightly grease cupcake tins. Pour 2/3 into each cup. Bake approximately 20 minutes or until toothpick comes out clean.

This recipe was taken from my beloved Sunset "Easy Basics" Cookbook. The banana bread reminded me of our family's favorite restaurant "Cooky's Steakhouse". They served moist and rich banana bread at their "all you can eat" shrimp and salad bar. Good times!
