3-4 lobster tails, large, with outer membrane removed, and shell intact
Prepared bread crumbs
Oil
Garlic, minced finely
Salt and red pepper
Tomato pulp
Oregano

Directions:
Directions:
Insert wooden skewers up the back of the tail, between meat and shell, to prevent tails from curling up, or crack shells back. (Skewer is preferred). Cut a line down meat and open slightly, to hold filling.

Line them up in a greased pan. Spread tomato pulp and a little bit of salt and pepper over tails. Drizzle with olive oil and minced garlic. Sprinkle lightly with oregano.

Bake in 400° oven for about 20 minutes, then sprinkle with prepared bread crumbs. Continue to cook until crumbs are brown and toasty and lobster meat is cooked.

Serves 3 or 4.

...I use lobster tails, but live lobster may be used, and may be better. If live lobster is used, you must dip in boiling water, snip under part of shell and clean out. From that point on the recipe is the same....Pat
