1 tsp. oil
1 clove minced garlic
1/4 c. each onion,and red pepper
1 T. jalapeno
1/8 tsp. salt
2 1/4 oz. uncooked cornmeal
3/4 oz. reduced fat cheese
1 tsp. margarine
1/4 c. salsa

Directions:
Directions:
Heat oil in non-stick pan 1 1/2 quart; Add onion, peppers, and garlic until soft. Increase heat to high, add 1 1/2 cup water and boil. Add meal, stir in cheese and margarine. Reduce heat to medium and cook until thickens about 4 minutes. Spray 7 inch pie plate. Pour polenta into it. Cool 4 minutes. Serve topped with salsa.
