1 16-ounce box Penne pasta
1 head of cauliflower
1+ cups pesto
1 lb. ground sausage (can be spicy)
1 cup shaved Romano cheese
1+ cups arugula (optional)
1 container grape tomatoes, halved

Directions:
Directions:
1. Cook pasta according to directions.
2. Cut cauliflower florets from stalk and boil/steam, then set aside.
3. Brown sausage while pasta cooks.
4. Drain pasta and add enough pesto for the pasta to be well coated. Mix in browned sausage. Add cauliflower, Romano cheese, and tomatoes.
5. Add arugula right before serving. Top with additional Romano cheese, as desired.
