5 lbs potatoes
1/2 lb bacon
1 c onion, chopped
1 1/2 c celery, diced
2 hard cooked eggs, chopped

DRESSING:

2 cups water
1/4 c bacon drippings
1 3/4 tsp salt
pepper
1 1/4 c vinegar
2 tbsp. cornstarch
1 1/2 c sugar
1 1/2 tsp celery seed, optional

Combine ingredients and cook until thickened.
Directions:

Cook bacon, drain and crumble. Reserve drippings. Peel and slice or dice potatoes. Simmer until almost tender. Drain and combine with dressing, heating till potatoes are heated thru.

This is Grandma's original recipe. I substitute 3/4 tsp celery salt for the celery seed.
