1 Onion, Minced
2 cups rice
3 tbsp. butter
1 Cup White Wine
2 quarts chicken stock or College Inn chicken broth
1 package dried mushrooms, soaked according to instructions on package
1 pinch saffron
Parmesan cheese

Directions:
Directions:
Brown onion in a little butter. Remove onion from pan, add some more butter and rice, brown slightly. Add onion back to pan, and add wine until absorbed. Add one cup chicken broth and pinch of saffron, stirring constantly. When stock is absorbed, add a second cup and the mushrooms. Continue to add stock, one cup at a time, until all stock is absorbed, stirring constantly, until the rice dish is of a creamy consistency. Serve hot with Parmesan cheese on the side, or you may stir the cheese into the rice mixture just before serving.

NOTE: You may, if you wish, add mushrooms, peas, cooked shrimp, diced cooked chicken or diced chicken livers just before serving, but the dish stands very well on its own without any other addition.
