12 cups cauliflower florets (about 2 heads)
2 T olive oil
2 tsp chopped fresh thyme
1 T chopped fresh parsley
2 tsp chopped fresh tarragon
3 minced garlic cloves
1/4 cup (1 ounce) grated fresh Parmesan cheese
2 T fresh lemon juice
1/2 tsp sale
1/4 tsp pepper

Directions:
Directions:
Preheat oven to 450 degrees. Place cauliflower in a large bowl and drizzle with oil, parsley, thyme, garlic, and tarragon. Toss well to coat. Place in a large roasting pan or jelly-roll pan. Bake at 450 degrees for 20 minutes or until tender and browned stirring every 5 minutes. Combine cauliflower mixture with cheese and remaining ingredients in a large bowl. Toss well to combine.
