1 onion, chopped
3 cloves garlic, minced
2 (4 oz) cans green chile peppers, chopped
1 TBS ground cumin
1 TBS dried oregano
1 tsp cinnamon
ground cayenne pepper to taste
ground white pepper to taste
2 lbs ground chicken
3 cups chicken broth
3 cans white beans (I prefer cannelini, but great northern or navy work also)
2 cups shredded Monterey Jack cheese
sour cream, for garnish

In a large pot over medium heat, combine the onion , garlic and ground chicken, saute' for 10 minutes, or until chicken is browned, Add the chile peppers, cumin, oregano, cinnamon, cayenne and white pepper to taste, saute' 5 more minutes. Add two cans of the beans and the chicken broth to the pot. Puree or smash the third can of beans and add them to the pot. Stir well and simmer 15 minutes, longer if you have the time. Top each bowl with a handful of the Monterey jack cheese and a dollop of sour cream. Serve with tortilla strips, chips or crackers.

We love this chili, and the recipe is versatile. You can use ground turkey and add chopped jalapeņos for a variation.
