2 egg yolks, well beaten
6 Tbs. sugar
1/2 tsp. grated lemon rind
2 Tbs. lemon juice
2 egg whites
2 Tbs. sugar
1/2c. whipping cream
16 vanilla wafers

Directions:
Directions:
1. Combine egg yolks, sugar, lemon rind, and lemon juice.
2. Cook in top of a double boiler, stirring. Cool.
3. Beat egg whites until stiff. Gradually add sugar, mix.
4. Fold egg whites and whipped cream into egg yolk mixture and chill.
5. Crush vanilla wafers with a rolling pin. Cover bottom of shallow freezing tray
with half of crumbs.
6. Pour lemon filling into the tray and cover with remaining crumbs. Freeze until
firm.

Ma always made this using a metal ice cube tray with the insert removed. It kept the desert really cold and made it easy to slice. Use one if you can find it.
