1 lb. ground beef
2 med. onions chopped
1 green pepper chopped
2 Tbs vegetable oil
1 can (16 oz.) whole peeled tomatoes with liquid
1 can beef consomme`
2 tsp. chili powder
1 tsp salt
1 C. long-grain uncooked rice
4 oz. cheddar cheese shredded

Pre-heat oven to 350 degrees

1. Saute` beef, onions, peppers in oil stirring constantly until no pink remains in beef and onions are tender. (Pour off any fat.)
2. Add tomatoes, consomme, chili powder, salt and bring slowly to boiling; stir in rice and cook for 5 minutes. Cover pan.
3. Bake in a oven at 375 degrees for 30 minutes. Uncover, stir and top with cheese. Bake 15 minutes longer.
