5 lbs. crawfish meat, chopped or ground
250 clean crawfish heads
2 stale poor boy breads (soak and squeeze dry)
2 cups chopped shallots
2 cups chopped parsley
Salt and pepper to taste
1 dozen eggs

Directions:
Directions:
Mix above ingredients, using 1 cup each of shallots and parsley, and stuff into heads. Keep some of mixture for gravy. Pass stuffed heads in four and fry in deep fat or oil. Pour out part of fat and make a roux with 1 cup of flour. Add water. Put in the stuffed, fried heads and simmer for 1 hour. Add remaining 1 cup of shallots and 1 cup of chopped parsley ½ hour before turning off. Serve over rice.

This is an absolute favorite meal for the family. Several of the grand-kids have taken lessons from maw maw Odile on making crawfish bisque.
