¾ cup chopped walnuts
1 cup cut-up pitted dates
1 ½ tsp. baking soda
½ tsp. salt
3 tbs. shortening
1 cup applesauce
2 eggs
1 tsp. vanilla
1 cup sugar
1 ¾ cup flour*

Directions:
Directions:
With fork, mix nuts, dates, baking soda, and salt. Add shortening and applesauce; let stand 20 minutes.
Preheat oven to 350º. Grease 9x5x3 loaf pan.
With mixer beat eggs; beat in vanilla, sugar, and flour. With fork, mix in date mixture until just blended. Pour into pan. Bake 1 hour or until done. Cool in pan 10 minutes. After cooled, wrap in foil. Cool overnight before serving.
*If using home made applesauce decrease the flour to 1 ½ cups.

Found this recipe both in Mom's and Aunt Jessie's recipes. I tried it and it didn't come out very good. Junita and Helene said store applesauce is thinner than homemade. They suggested that adding more flour would help. By adding the 1/4 cup made it come out perfect.
