1 ½ sticks butter
1 ½ med onions, chopped
1 ½ ribs celery, chopped
1 bell pepper, chopped
1/8 cup flour
2 tbsp. chopped parsley
1 ½ - 2 lbs. peeled shrimp or crawfish
1 pint half and half cream
8 oz. Velveeta cheese, cut into ½ inch squares
1 tsp. chopped jalapeno pepper
1 ½ cloves garlic, chopped
Salt and pepper to taste
1 box (16 oz.) fettuccine noodles
¼ cup grated cheddar cheese

Melt butter in large heavy sauce pan. Add onions, celery and bell pepper. Cook 10 minutes until onions are clear. Add flour and blend well. Cover and cook for 15 minutes, stirring occasionally. Add parsley and shrimp or crawfish. Cover and cook for 20 minutes, stirring often. Add cream, Velveeta cheese, Jalapeno pepper and garlic. Mix well. Add salt and pepper to taste. Cook covered on low heat for 20 minutes, stirring occasionally.

Cook fettuccine noodles according to package directions. Drain. Put noodles in mixing bowl large enough for noodles and sauce. Pour sauce over noodles and mix thoroughly. Pour into large buttered casserole dish or baking pan. Sprinkle grated cheese on top. Bake at 350 degrees F for 12 minutes.

Note: For thicker sauce, reduce half and half and add more Velveeta cheese.
