12 large bell peppers 4 lbs. shrimp, peeled and chopped
¼ cup vegetable oil 1 cup Italian bread crumbs
2 large onions chopped 2 eggs beaten
2 ribs celery chopped ¼ cup chopped parsley
4 cloves garlic minced Salt and Pepper to taste

Directions:
1. Split 10 peppers in half lengthwise, remove seeds and stem. Prepare pepper halves by scalding or steaming.
2. Chop remaining two peppers. Sauté onion, celery, and garlic in vegetable oil until wilted. Season shrimp with salt and pepper. Add shrimp to sautéed vegetables and cook until shrimp turn pink.
3. Stir in chopped green peppers and cook over medium heat until all liquid is absorbed.
4. Remove from heat and stir in bread crumbs, eggs, and parsley.
5. Fill peppers with shrimp mixture. Sprinkle tops with bread crumbs. Bake at 350 degrees for 20 minutes or until bread crumbs brown lightly. Yield: 12 to 16 servings.
