12 large bell peppers ¼ cup chopped parsley
¼ cup cooking oil 2 cups cooked rice
2 ½ cups chopped onions 2 tsp. salt
½ cup chopped celery ½ tsp. black pepper
2 cloves garlic, minced ¼ tsp. red pepper
1 ½ lbs. ground beef Italian bread crumbs

Directions:

1. Cut off tops and stems of peppers. Discard stems and chop 6 pepper tops and set aside.
2. Scald peppers on top of stove until tender.
3. Using a heavy Dutch oven, heat oil and sauté onions, celery, and garlic until transparent. Add ground beef and cook until brown and crumbly. Stir in chopped bell pepper and continue cooking over low heat.
4. Fold in cooked rice and parsley. Add seasoning.
5. Stuff peppers with mixture. Sprinkle tops with bread crumbs and bake at 350 degrees for 20 minutes. Yield: 10 to 12 servings.
