1 (16 oz.) bag of tri-colored rotini pasta, cooked
1-3 diced chicken breast (seasoned and sautéed or grilled)
1 (14 oz.) can artichoke hearts, drained and sliced
1 small can of sliced black olives
1 bunch green onions chopped
½ bunch of broccoli florets cut into small pieces
½ lb. sliced, fresh mushrooms

Dressing
½ cup wine vinegar 1 tsp. dried minced onion
2 tsp. Dijon mustard 1 cup mayonnaise
4 cloves garlic, minced 1 tsp. dried mustard
1 tsp. dried parsley 1 tsp. Italian dressing
1 cup olive oil 1 tsp. Tony’s Creole seasoning

Mix dressing ingredients together and toss into large bowl of salad ingredients. Let sit overnight or for several hours in the refrigerator.

This pasta salad has been served at the St. Joseph’s Academy senior brunch for several years. They were kind enough to give the girls a copy of the recipes for all the food and drink served at the brunch. The salad has now become a favorite at showers hosted by the family.
