4 whole chicken breasts, boned and split in half to make 8 pieces
1/2 c. butter
1/2 tsp. oregano
1/2 tsp. marjoram
1/2 tsp. parsley
1 c. flour
2 eggs, beaten
1/2 c. sauterne wine
1 c. bread crumbs
1/4 lb. Monterey Jack cheese

Directions:

Pound breasts with a mallet or rolling pin. Salt and pepper to taste. Whip butter, parsley, oregano and marjoram until fluffy. Spread butter mixture on a piece of cheese and lay on breasts, butter side down. Roll breasts and secure with toothpicks. Roll in flour and then dip in beaten egg and then roll in the bread crumbs. Place in a buttered bakin dish and bake at 400 degrees for 30 minutes. Mix remaining butter that has been melted and mixed with wine, Baste on chicken. Bake 15 to 20 minutes longer, basting with wine until done. Can make up ahead of time and freeze. Thaw and bake the same way.
