2 pounds ground beef
1 cup bread crumbs
1/2 cup chopped celery
1/2 cup chopped onion
3 tbls Worcestershire sauce
1/4 cup mustard
2 tbls parsley
1 1/4 tsp salt
1 1/4 tsp pepper
1 6 oz tomato paste
2 eggs beaten
Bacon or cheese (optional)
4 slices of bread
2 tbls brown sugar
1 tbls lemon juice

Preheat oven to 350ºf

Line a pan with aluminum foil & spray with cooking spray (or use silpat).

Mix ground beef, beaten eggs, bread crumbs, onion, celery, 1/2 the can of tomato paste, 2 tbls mustard, parsley, 1 tsp of the salt and pepper until combined. Line the pan with the bread. Mix the brown sugar, lemon juice, remaining mustard, and tomato paste. Spread over meatloaf; tent foil over meatloaf and bake for about 50 minutes or until the thermometer reaches 165º. Remove foil for the last 10 minutes of cooking.
