1/2 lb. Hot Italian Sausage, sliced 1/4 inch thick
1 - 14.5 oz can Tomatoes with Garlic & Onion
1 1/4 c, Chicken Broth
1 c. uncooked long grain rice
1 - 14.5 oz can Peas, drained
1/4 lb raw shrimp, shelled and deveined


Directions:
Directions:
Brown sausage in large skillet, drain off fat. Add tomatoes, broth and rice. Bring to a boil, cover and simmer for 25 minutes. Add peas and shrimp during the last 8 minutes. Garnish with green onions, if desired.

Variations: Instead of shrimp, add cubed chicken with tomatoes, broth and rice.
Add corn and serve with hot pepper sauce for a Cajun twist.
