Pineapple Upside Down Cake Recipe

½ Cup butter
1 Cup brown sugar
Canned pineapple sliced into rings
Maraschino cherries
Cake:
2 eggs
¼ Cup butter
1 Cup sugar
½ tsp salt
1 ½ tsp baking powder
1 Cup flour
½ Cup milk
1 tsp vanilla
OR you can use an 18 ounce box of vanilla cake mix.

Directions:
To make the cake portion you can use my aunts original recipe to follow or you can use an 18 ounce box of vanilla cake mix. If you use the box mix follow the directions on the box to make the cake and the box directions on how long to bake and at what temperature. Either way you go make the cake portion first and set aside while you prepare the pan and topping.

Cake:
Heat milk and ¼ cup butter until very hot but not boiling. While the milk is heating, beat the eggs and salt until light and fluffy. add the sugar gradually and beat until thick and lemon colored. Combine flour and baking powder and add to the mixture gradually. Add the hot milk all at once and stir quickly until thoroughly blended. Add the vanilla and set aside.

Topping:
melt the butter and brown sugar in the bottom of a 9" square baking pan, distribute evenly in bottom of the pan. Place pineapple slices in single layer to cover the bottom of the pan and place a cherry in each pineapple ring hole.

Pour the cake mix into the pan and bake at 350º for 35-40 minutes. Only let the cake cool for a couple of minutes before placing a plate over the pan and carefully turning the cake out onto the plate. If you wait too long, the brown sugar will harden and make it hard to remove.

Growing up I was lucky to be able to spend many weekends at my Aunt Betty and Uncle Russell's house. Betty gave me this recipe on one of those visits. Betty & Russell have been gone for many years now and I was really excited to find this recipe that I forgot I had to be able to represent her in this family cook book.
