Ingredients:  
2-3 lb. sirloin beef, cubed
2 pkg. gravy mix
12 carrots, sliced
2 cooking onions, chopped
1/4 c. parsley
1 tsp. salt
1 small can diced tomatoes
1 c. frozen peas (can be any vegetable)
6 potatoes
1 c. celery, sliced
1/2 tsp. thyme
1/2 tsp. pepper

Directions:
Directions:
1. Add 1-2 tbsp. oil to large pot & add meat to brown
2. Add can of tomatoes, & crush if necessary
3. Add 2 1/2 c. water & gravy mix. Stir well
4. Add onions, celery, salt, thyme, pepper, carrots & parsley
5. Bring to a boil, then simmer for about 1 hour
6. Add frozen peas
7. Partially cook potatoes & add to stew
8. Simmer another 1/2 hour
