Whole or half Pork Loin
McCormick's Applewood Rub
Tenn South Apple Moonshine (alcohol cooks out at 170)

Directions:
Take the pork loin and rinse in cold water. Split the pork loin down the middle about halfway through leaving an inch or so uncut on each end (to hold liquid). In a low open roasting pan lightly drizzle dressing on sides to let it run down into the pan to help prevent sticking and to allow the rub to stick. Sprinkle 2 tablespoons onto the top of the loin including the split opening. For half a loin use just one tbsp. Pour 3-4 ounces of well shaken Tenn South Apple "Shine" into the open cavity, marinade in trig for 3-4 hours. Preheat oven to 375 place roast in oven. After one hour reduce heat to 300 and cover with foil, bake for 2 additional hours. Remove from oven let stand covered for 30 minutes. Uncover and use tongs and knife to shred the pork loin DO NOT drain or remove the drippings, mix shredded pork with drippings and serve!

Not my Mother's recipe, just a twist from the Good Ole Boys heritage of the deep South. I usually serve with a choice of either white or dark BBQ sauce as optional condiments to the meat. Makes EXCELLENT BBQ sandwiches!
