1/2 up shortening
1/2 cup butter
2 cups brown sugar
2 eggs
1/2 cup water
T tsp. vanilla
4 cups flour
1 1/2 tsp. baking powder
1/2 tsp. soda
1/2 tsp salt
1 cup of moist shreddered coconut

Directions:

In a large bowl thoroughly mix first 4 ingredients. Stir in water and vanilla.In another bowl sift flour, baking powder, soda and salt. Stir into butter mixture and mix thoroughly. Stir in coconut and chill two hours.

Preheat oven to 400º. Ovens vary and you have to adjust according to your oven or try a sample. Roll cookie dough into walnut size pieces. Press into triangular shape with fingers. Press with tines of fork to create washboard effect. Bake 8 to 10 minutes or till lightly brown. Do not over bake.

These cookies were named after the old fashioned wash boards used to hand wash cloths
Before the advent of washing machine. They are a tasty coconut cookie flattened with tines of a fork to give them the ridges of a washboard.


This was a recipe in a book written in the 1930's by Rita Amber in wi. These were depression days
