4 Large Russet Potatoes
4 Slices Bacon, cooked and crumbled
4 T butter, softened
1/2 C Sour Cream
1/4 C Milk
1/2 t to 1 t salt to taste
Pepper to taste
1 to 1 1/2 C grated Cheddar cheese
1 chopped green onions

Directions:
Directions:
Clean potatoes and poke with fork. Can spray with olive oil and sprinkle some kosher salt on skins. Wrap in aluminum foil and bake at 375 degree for 1 hour.
Fry bacon and crumble. Take out sour cream and butter to softened.
When potatoes done cut lengthwise. Scoop out potatoes be careful not to tear the skins.
Mix the butter, sour cream and mash the potatoes with a potato masher. Add milk and majority of the cheese leaving some for topping. Add half the bacon and onions. Taste and add salt and pepper as needed. Fill the shells with the potato mixture and top with remaining cheese, bacon and green onions. Bake at 350 degrees for 15 minutes.
