Beets
1 cup sugar
1 cup water
1 cup vinegar
1 Tbsp. pickling spice

Directions:
Directions:
Cook beets then remove skin and slice. Cook together water, sugar, vinegar and pickling spices. Add sliced beets and heat. Pack in sterilized jars, workout air bubbles with a knife. Wipe top of the jar with clean paper towel and seal. Process in waterbath 20 minutes.

When cooking beats leave little bit of stem on and do not cut off tail until after cooked.

This recipe came from a high school Home EC teacher, my sisters and brother might remember her it was Mrs. Johnson. I have kept the same recipe and used it several times.
