In large bowl mix eggs and high speed until light and fluffy add sugar and continue beating and high-speed for 15 minutes scraping bowl occasionally bead in anise extract gently add flour and baking soda and continue beating until well mixed Jojo for one hour on well floured surface roll Joe into a half inch rectangles cut out to any shapes place shapes on greased cookie sheets reroll scraps and repeat procedure let's stand over Night at room temperature to dry the following day preheat oven to 375 please cookie sheets in oven and reduce temperature to 300 bake 25 to 30 minutes until cookies turn white on top and bottoms are slightly golden let cool on wire rack store and tightly covered container for 2 to 4 weeks before servingto any ants flavor and age do not freeze
