2 T olive oil
2 cups chopped bell peppers, any color
1 1/2 tsp Italian seasoning
2# ground beef
1/2 cup grated onion
1 cup fresh bread crumbs
1/2 cup milk
2 eggs lightly beaten
2 T tomato paste
1 garlic clove, minced
1/2 tsp pepper

Directions:
Directions:
heat 1T oil in large skillet over med heat; add diced peppers and Italian seasoning; cook until peppers soften about 5 minutes, transfer to small bowl

in large bowl, mix beef, onion, crumbs, milk, eggs, tomato paste, garlic and black pepper

transfer 2/3 of meat mixture into loaf pan, making a well for filling

fill center with cooked peppers, top with remaining beef mixture

350º 1 hour
