For the salad:
3 Tablespoons cider vinegar
2 Tablespoons honey
2 Teaspoons honey
2 Teaspoons Dijon mustard
1 1/2 teaspoons poppy seeds1/4 Tsp salt
Freshly ground black pepper
3 Tablesppons veg oil
1/3 cup diced fine red onion
For the coleslaw:
1 pound flat leaf kale leaves
2 Granny Smith apples or Fuji apples
Sunflower or pumpkin seeds
Cranberries

For the dressing:
Place vinegar, honey, mustard, poppy seeds, and salt season with pepper and whisk to combine. While whisking constantly, slowly add oil until,it is incorporated. Add onion, stir and set aside
For the coleslaw:
Wash and dry kale. Cut out and discard tough stems. Arrange leaves into stacks, slice crosswise into 1/4 inch ribbons, add to the bowl with the dressing. Core the apples, cut into 1/2 inch match sticks,add to,the bowl. Toss and let sit for at least 15 mins at room temperature and up to one day in refrigerator. Todos again before serving

Costco has it all complete but this is nice to prepare at home
