2 1/2 cups flour
1 cup sugar
1 tbsp. anise seeds, crushed
2 tsp. baking powder
1/4 tsp. salt
4 tbsp. butter, softened
3 eggs
1 tsp. vanilla extract
1/2 tsp. lemon extract
1/4 tsp. anise extract
1/2 cup candied red cherries, cut in half
1/2 cup candied green cherries, cut in half
1/2 cup lightly toasted whole almonds

Directions:

Mix all the dry ingredients together, except for 1 cup of flour; put it to the side. Add the softened butter, eggs and all the extracts. Mix well. Stir in the red and green cherries, almonds and the remaining 1 cup of flour. Wrap the dough with plastic wrap and refrigerate for at least one hour. On a parchment-lined cookie sheet, divide the dough in half. Shape each half into a 10x3-inch loaf. Bake in a preheated 350º oven for 25 minutes. Remove cookie sheet from the oven and with a serrated knife, cut the hot loaves crosswise into 3/4-inch slices. Lay the slices cut side down on the same cookie sheet, return to the oven and bake for 5 minutes longer. Remove cookies and place onto wire racks.
