leftover turkey bones and meat
salt and pepper
carrots
celery stalkswith leaves
bay leaf
Chopped celery, carrots and onion
Whole black pepper
Whole cloves, allspice, and bay leaf
Dumplings - see directions

Directions:
Directions:
Broth -simmer turkey bones, carrots, celery and onion chunks for 2 to 3 hours. Discard vegetables, remove turkey from bones, cut into chunks. Strain broth.
To complete the soup, add fresh chopped celery, carrots, onion, and spices. Simmer until vegetables are done.
Dumplings: Combine 2 beaten eggs, 2 cups flour and 1 c. cream - stir well. Add by teaspoon to soup and gently boil until done.

Submitted by Nancy: "This was one of Mom's staple recipes forever! Mom loved making soup out of the turkey remains. One year at Jeanette's in East Helena, we put the carcass in a bag and set it outside for Mom to take back to Nancy's. Maggie (Nancy's dog) wanted out, and there was a gate between the deck and the turckey, so we were sure it was safe. When leaving an hour later, the turkey had been destroyed! Maggie was innocently sitting onthe deck door wanting in. We realized that she had jumped the gate, eaten the remains and jumped back! No soup for Mom and Dad!
