Grandmother's Sugar Cookies Recipe

1 lb. butter, softened
1 lb. sugar
4 egg yolks
1 tbsp. vanilla extract
1 tsp. almond extract
about 6 cups of flour
2 beaten egg whites

Directions:
Directions:
In a large bowl, whip the butter until creamy. Add the sugar; beat well. Slowly mix in the egg yolks and beat on medium speed until well-incorporated. Add the vanilla and almond extracts; mix. Slowly add flour until the dough looks thick enough to knead. Divide into 4 sections and wrap in plastic wrap. Chill overnight if possible. Bring the dough to room temperature. On a floured surface, roll it out to an 1/8 inch thickness. Cut out desired shapes and place on parchment-lined cookie sheets. Beat 2 egg whites and brush onto the cookies. Sprinkle with colored sugar and decorations of your choice. Bake in a preheated 350º oven for 8 to 10 minutes or until light brown. Be careful not to over bake.

This is the sugar cookie our mother always baked at Christmas time. It usually involved the grandchildren gathering around, helping cut out shapes and then decorating each one. It was always fun trying to figure out who decorated which cookies after they came out of the oven!
