½ to 1 cup uncooked wild rice; prepared (directions below)
2 cups water
2 Tbsp butter
1 med. onion, minced
1 quart whole milk
2 cans Cream of Potato soup
1 lb. Velveeta cheese, cubed

Directions:
Directions:
Sauté onion in butter. Add water, milk, and potato soup. Increase heat to medium, stirring occasionally. When mixture is hot, add cubed cheese. When creamy add cooked wild rice. For variation, add sautéed mushrooms or other vegetables.

Wild Rice Preparation:
Add 1 cup washed rice to 3 cups boiling water. Simmer covered for 50 to 60 minutes, or until kernels puff open. If desired, pour off water, add more and return to boil/simmer to decrease the “wild” taste. Do as many as 6 times per hour. Uncover and fluff. Simmer 5 more minutes. Drain any excess liquid.

This amazing soup was served to us via Mary Winslow when Steve, Jake, Rudy and Cheryl stayed with them on Lake Kabatogama. Amazing family, amazing food, amazing fun!
