1 lb. butter or margarine
2 cups sugar
3 eggs, separated
1 tbsp. vanilla extract
1 1/2 tsp. almond extract
1/4 lb. almond paste
5 cups flour

Directions:
Directions:
In a large bowl, cream the butter and sugar. Separate the eggs. Add the yolks, one by one, to the mixture; beat well. Slowly add the vanilla, almond extract and almond paste; mix until well-blended. Add the flour slowly by hand until incorporated. Divide the dough into 4 pieces and wrap them in plastic wrap. Refrigerate for about 4 hours or overnight. Roll out the dough on a floured surface until it is about 1/8 inch thick. Cut out shapes with cookie cutters and put them on parchment-lined cookie sheets. Whip the egg whites until frothy. Brush onto the cookies and sprinkle with colored sugar or a topping of your choice. Bake in a preheated 350º oven until golden brown.

This was our great-grandmother's recipe. These sugar cookies are very good and have a very pleasant almond flavor.
