1 Tbsp. evoo
2 cups chopped white onions
1 cup chopped red bell pepper
1 cup quinoa, rinsed and drained
2 tsp. chili powder
1/2 tsp. ground cumin
1/2 tsp. salt
1 1/2 cups water
2-15oz. cans black beans, rinsed and drained
1/2 cup chopped fresh scallions OR cilantro

Directions:
Directions:
Heat oil add onions and red pepper cook until soft. Stir in quinoa and spices. Add water and bring to a boil. Cover and simmer on med-low for 15 minutes. Add beans and 1/4 cup scallions. Cook uncovered until heated through and liquid is fully absorbed, about 3 minutes. Transfer and sprinkle with remaining scallions. Can use cilantro instead of scallions.
