20-24 cups peeled tomatoes
2-3 cups chopped peppers (hot), (green), (mixed)
2 chopped onions
5 Tbsp. canning salt
5 Tbsp. chili powder
1-2 Tbsp. black pepper
1 cup white vinegar
5 cloves garlic
3 Tbsp. sugar
3 Tbsp. brown sugar
1 tsp. cumin
1/4 cup corn starch

Directions:

Simmer all the above ingredients except for the corn starch! Cook for 1 hour, once it comes to a boil cook 45 minutes to 1 hr. after boil. Put in 1/4 cup water, 1/4 cup corn starch to thicken. Place in sterilized jars. Boil water-process jars for 15-20 minutes!

This recipe is from a dear, dear friend and next door neighbor in Lincoln! They had 6 kids & grandpa living with them & they had a smaller garden then Mark & I had, but, Marion & her husband Jim were some of the best canners that I know of. They shared this recipe with us, when we had tomatoes coming out of our ears, I asked her what we could do with all of them. She just smiled & gave me this recipe!
