5 lbs. of plums & crush thoroughly ripe tart plums. Do NOT peel or pit, add enough water to barely cover the plums & simmer covered 10 minutes, place in a jelly bag or colander (like to rinse pasta)
I usually boil the plums a bit and then mash with a potato masher, throw the pulp & save the juice.
Add 4 cups of sugar to 5 1/2 cups of juice.
Cook Jelly-mix sure jell with juice in sauce pan over high heat to a full boil stirring occasionally, then add sugar, bring to a full rolling boil, boil hard, 2 minutes stirring constantly, skim off the foam & pour into jars & seal. I usually have to boil about 5 minutes.

Sterilize your jars by either dishwasher method or boiling method in a big pot of water on the stove. Heat your covers for the jars also in a pan of water to sterilize.

This is a recipe that Mark's mom made in Sept. 1997 for us. When Mark's mom & dad came to visit us they would bring many loafs of bread from sweetheart bakery, and we enjoyed the jelly on toast.
