10 Pounds Ground Beef
2 Pounds Spicy Breakfast Sausage
2 Pounds Regular Breakfast Sausage
2 Medium Onions
2 Green Bell Peppers
2 Red Bell Peppers
3 Large Jalapeņos (no seeds)
3 Cans Rotel Chili Fixins
3 (16 Ounce) Cans Tomato Sauce
2 Cans Refried Beans
1 Can Beer
2 Packages McCormick Chili Seasoning Mix
3 Tablespoons Oregano
3 Tablespoons Cumin
2 Tablespoons Ground Red Pepper
2 Tablespoons Minced Garlic
Salt and Pepper, To Taste
2 Tablespoons Chili Powder
4-6 Cups Water

Brown hamburger meat in a large skillet; drain. Brown sausage, but DO NOT drain.

Cut bell peppers, jalapeņos, and onions into small pieces (about the size of your thumbnail). Saute them and minced garlic in butter until tender.

Add veggies and browned meat in roaster.

Add all ingredients except for refried beans, salt, pepper and water. Add 4-6 cups of water depending on the thickness of the chili. Cook at a low boil for 1 hour.

After 1 hour, add refried beans, salt and pepper. Continue to cook for 2 more hours at a slow simmer/boil.

Regular Rotel can be substituted for Rotel Chili Fixins. If you do that, you need to use 3 packages of McCormick Chili Seasoning Mix (2 Regular and 1 Spicy).
