2 1/2 cups uncooked penne pasta
1# ground beef
1 small onion, chopped
1 package (16 oz) frozen mixed vegetables
1 1/2 cups water
1 (15 oz) can tomato sauce
1 (6 oz) tomato paste
1 envelope sloppy joe mix
1 T dried parsley
1/2 tsp oregano
2 cups 2% cottage cheese
1 1/2 cups shredded Colby-Monterey Jack

cook pasta

cook beef and onion in large skillet till meat cooked, drain; add vegetables, water, tomato paste, tomato sauce, sloppy joe mix and spices

bring to a boil, reduce heat, simmer uncovered 7-9 minutes, stir in pasta

spoon 1/2 mixture into 13x9 baking dish, top with cottage cheese and 3/4 cup Colby-jack and then top with meat and pasta mixture

cover bake 350º 25 minutes uncover sprinkle with rest of cheese bake 5-10 more minutes
